Julio Peralta envisages a sustainable future for Nicaraguan coffee through the export and promotion of individual micro lots. He has encouraged family members and fellow farmers to explore new ways of growing coffee and to showcase the complex conditions and technical facilities Nicaragua can have to create extraordinary flavours in the cup.
As a result several of his family farms work to produce coffees with distinct characteristics which are marketed as individual lots as opposed to bulking everything together for export.
In deciding plots for harvested as micro lots, a brix refractometer is used to measure the sugar content of the cherries across different areas on the farm. The plots are then selected and harvested. A water siphon to select the best quality cherries and separate defect fruits. Lot 5 is naturally processed, the fully ripe cherries are dried with both pulp and mucilage intact. Slow delicate drying occurs with the cherries being turned regularly during the heat of the day and left covered overnight. This allows fully enzymatic processes to occur adding complexity to the final characteristics of the beans.
By experimenting with processing and varietals across different areas, it is possible to determine which type of process works best taking into account the natural conditions and varietals found on each farm. Through the process of producing micro lots, the teams aim to develop knowledge which enable them to make decisions as to which varieties and which processes work best in each farm and plot. We are excited to be able to have Finca La Cascada Lot 5 exclusively for Little and Long and, with Falcon, to be supporting this drive for quality, innovation and added value. The results achieved this year have been outstanding and we are looking forward to sharing the great coffee with you. The on-going threat of coffee rust and a falling market threatens all coffee production but this venture will hopefully contribute towards safeguarding coffee farmers and their farms in Nicaragua.
This Nicaraguan Finca la cascada micro lot comes from Finca La Cascada, 50 hectare farm situated in the mountainous region Dipilto in Nueva Segovia. Due to the geographic and climatic conditions, the coffee produced is exceptional – Finca La Cascada receives annual rainfall of 1600 millimetres and has six streams running through the farm to join the immense El Volcan River.
