This month we’re in Brazil, with a coffee from Fazenda Aracaçu.

Everything on this farm is picked and kept separate by varietal, which tells you a lot about how they work. After an initial clean, the cherries go out onto the patios to dry in the sun, coming down to around 20% moisture fairly quickly. From there it’s a gentler hot air dry, then a finish in mechanical driers.

The detail we like: the coffee never goes above 40°C at any stage. That matters more than it sounds. Keep the temperature down and the seed stays healthy, which means the coffee holds its sweetness and stays stable for far longer in storage. Rushing the drying is how a lot of coffee loses its best years.

Once it’s dry, the cherry is hulled and the coffee rests in wood-lined silos, kept dark and cool, with music played to it while it sits. The farm takes the flow of energy across the place seriously. Whether the music is doing the work we couldn’t tell you, but they believe in it, they look after every other detail, and the coffee in the cup speaks for itself.

And that cup is a real crowd-pleaser. Dark chocolate and caramel do the heavy lifting, with a ripe cherry sweetness behind them and a lift of apple and orange on the finish. Low acidity, thick and smooth in the body, sweet all the way down. We’ve roasted it medium to bring out the chocolate and caramel without flattening the fruit. It makes a superb espresso, holds its own in milk beautifully, and is a lovely easy-going cafetière for a slow morning.
