Introducing Our El Salvador Santa Isabel Coffee
Our El Salvador Santa Isabel coffee is a tribute to heritage, harmony, and the high-altitude richness of the Cacahuatique Mountains. Grown by the Hernández family, who have been cultivating coffee for over four generations, this specialty lot reflects a deep respect for both the land and the community it sustains.
Santa Isabel is located in the Tecapa-Chinameca mountain range, perched on the volcanic slopes of Volcán de San Miguel at an altitude of 1,000 – 1,200 MASL. This region, known for its fertile volcanic soil and tropical microclimate, offers the perfect environment for Bourbon and Pacas varietals to thrive. The farm is shaded by a canopy of native ingas and trees, providing a biodiverse sanctuary for birds and wildlife, and contributing to the layered complexity in the cup.
The coffee is carefully cultivated across several small ranches before being processed at the Santa Isabel mill – named in honour of Isabel Hernández, the family’s grandfather and a key figure in expanding the farm’s legacy. Each bean carries the story of the family’s devotion, from the early days of great-grandfather Cesario to the community-driven leadership of Victor Hernández.
Expect a beautifully balanced cup with bright acidity, notes of cashew, black tea and grapefruit.

Coffee arrived in El Salvador in the mid-19th century and quickly became a cornerstone of its economy and identity. Over time, what began as an export crop evolved into a deeply rooted cultural tradition. Today, many of the country’s most celebrated coffees are grown by multi-generational families on small farms, where the craft is passed down like heirlooms.
El Salvador is home to iconic coffee-growing regions such as Santa Ana, Chalatenango, and the Tecapa-Chinameca range. These areas are defined by steep slopes, fertile volcanic terrain, and ideal altitudes ranging from 1,000 to 1,800 MASL. Varietals like Bourbon, Pacas, Pacamara, and Catuaí flourish here, prized for their clarity, sweetness, and elegant acidity.

Came across Iron & Fire at work, as we serve the Colombian Jazz in our cafe. The jazz is lovely, but this is my favourite coffee. A complex coffee with notes of milk chocolate and a lovely citrus finish. Pour over is definitely the way to go with this one!
